Bajio Ensalada
A freshly grilled flour tortilla cradles a generous portion of red-leaf lettuce, your choice of meat, beans and rice, chile corn and sweet onions. Topped with cheese, pico de gallo, sour cream, guacamole and your choice of one of our three house dressings then sprinkled with our crispy corn tortilla strips.
Chicken Green Chile Salad
Mesquite lime chicken, carmelized onions and a sweet chile chutney are sautéed in a balsamic vinaigrette then laid over a generous portion of red-leaf lettuce and topped with cheese, pico de gallo and our crispy corn tortilla strips. Served with a freshly grilled 12” tortilla.
Fish Salad
Hand cut and lightly seasoned Tilapia is flash fried and served over a generous bed of red-leaf lettuce then topped with sweet rice, chile corn, cheese, pico de gallo, coleslaw, cilantro and our Jalapeño Cilantro Ranch dressing.
Pineapple Shrimp Salad
Freshly fried tortilla chips smothered with melted cheese topped with choice of rice, beans, meat, and enchilada sauce. Garnished with one of our freshly prepared salsas and sour cream.
